High-Protein Vanilla Waffles

Makes: 4 large waffles
Ingredients:
- 100g oat flour (or blended rolled oats)
- 60g (2 scoops) BioX Protein vanilla whey protein powder
- 2 large eggs
- 240ml milk of choice
- 45g Greek yogurt
- 2 tbsp maple syrup
- 2 tsp baking powder
- 1 tsp vanilla extract
- Pinch of salt
Instructions:
- Preheat your waffle iron to medium-high heat.
- In a large bowl, whisk together oat flour, protein powder, baking powder, and salt.
- In a separate bowl, beat eggs, milk, Greek yogurt, maple syrup, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Don't overmix - a few small lumps are fine.
- Spray your waffle iron with non-stick cooking spray.
- Pour about 120ml (½ cup) of batter into the center of your waffle iron and cook until golden brown.
