Cooking with Kimmi - Protein Waffles

High-Protein Vanilla Waffles

Prep Time: 10 minutes
Cook Time: 15 minutes
Makes: 4 large waffles

Ingredients:

  • 100g oat flour (or blended rolled oats)
  • 60g (2 scoops) BioX Protein vanilla whey protein powder
  • 2 large eggs
  • 240ml milk of choice
  • 45g Greek yogurt
  • 2 tbsp maple syrup
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat your waffle iron to medium-high heat.
  2. In a large bowl, whisk together oat flour, protein powder, baking powder, and salt.
  3. In a separate bowl, beat eggs, milk, Greek yogurt, maple syrup, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Don't overmix - a few small lumps are fine.
  5. Spray your waffle iron with non-stick cooking spray.
  6. Pour about 120ml (½ cup) of batter into the center of your waffle iron and cook until golden brown.
