Cooking with Kimmi - Protein-Packed Vegetarian Quiche

Ingredients:

  • 6 large eggs

  • 1/2 cup cottage cheese

  • 1 scoop unflavored protein powder

  • 1/2 cup milk (dairy or plant-based)

  • 1 cup fresh spinach, chopped

  • 1/2 cup Kalamata olives, sliced

  • 1/2 cup feta cheese, crumbled

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon salt

  • 1/2 teaspoon dried oregano

  • 1 pre-made whole wheat or gluten-free pie crust (optional)

Instructions:

  1. Preheat Oven to 190°C. If using a pie crust, press it into a greased 9-inch pie dish.

  2. Whisk Together eggs, cottage cheese, protein powder, and milk until smooth.

  3. Add Fillings—stir in spinach, Kalamata olives, feta cheese, salt, pepper, and oregano.

  4. Pour Mixture into the pie crust (or a greased baking dish if going crustless).

  5. Bake for 30-35 minutes, or until the center is set and slightly golden.

  6. Cool for 5-10 minutes before slicing. Enjoy warm or cold!
